Follow each step to make the recipe successfully.
Add sliced carrots, chopped knol kohl, chopped beans, sprouted moong beans, chopped onion, chopped capsicum, and ginger pieces into a mixer jar. Close the lid and grind the mixture coarsely without adding any water.
Transfer the coarsely ground vegetable mixture to a large steel bowl. Add ajwain, sesame seeds, jeera, red chili powder, and salt. Then, add the chopped spinach leaves, wheat flour, and besan. Mix all the ingredients thoroughly by hand to form a dough. Do not add water, as the vegetables will release enough moisture.
Once the dough is formed, add about one tablespoon of oil and it again until smooth. Cover the dough and for to set.
Take a small portion of the rested dough and roll it into a ball. Dust it lightly with wheat flour. Roll it out into a small circle. Apply a little oil on the surface, fold it into a triangle, apply more oil, and fold it again. Dust with flour once more and roll it into a paratha of medium thickness. Ensure it's not rolled too thin.
Heat a tawa (griddle) over medium heat. Once hot, place the rolled paratha on it. Cook for about until small bubbles appear. Drizzle a teaspoon of oil or ghee over the paratha. Flip it with a spatula and cook the other side, applying oil/ghee as well. Press gently with the spatula to ensure even cooking and golden brown spots on both sides. Cook each side for until done.
Remove the cooked paratha from the tawa and place it on a plate. Repeat the process for the remaining dough. Serve the healthy parathas hot with your favorite pickle, butter, or ghee.
