  • 1/2 tspGaram Masala Powder
  • 1 tbspButter
  • 1 tbspWheat Flour
  • 1 cupMilk
  • 1 cube (or shredded mozzarella)Cheese
  • 1 cup (reserved from boiling)Pasta Water
  • 1 tspOregano
  • for garnishCoriander Leaves

Step-by-Step Instructions

  1. 1.Boil Macaroni

    Bring water to a boil in a pan. Add 3 cups of macaroni, 1 tablespoon of cooking oil, and salt to taste. Stir well to prevent sticking. Cook the macaroni for 5-6 minutes or according to package instructions until al dente.

  2. 2.Strain and Reserve Pasta Water

    Strain the cooked macaroni and immediately rinse it with cold water. Reserve 1 cup of the pasta water for later use in the sauce.

  3. 3.Sauté Aromatics

    Heat 1 tablespoon of olive oil (or sunflower oil/butter) in a pan. Add 3 cloves of minced garlic and sauté until fragrant. Then, add 1 finely chopped onion and sauté until it turns golden brown.

  4. 4.Cook Tomato Puree

    Add pureed tomatoes (from 3 large tomatoes) to the pan. Cook for 5-6 minutes, stirring occasionally, until the tomatoes are well cooked and the mixture thickens slightly.

  5. 5.Add Ginger-Garlic Paste and Spices

    Stir in 1/2 teaspoon of ginger-garlic paste and cook until its raw smell disappears. Then, add 1 tablespoon of chili flakes, 1 teaspoon of black pepper powder, salt to taste, 1 teaspoon of red chili powder, and 1/2 teaspoon of garam masala powder. Mix all the spices thoroughly with the tomato mixture on a low flame for 2 minutes.

  6. 6.Prepare White Sauce Base

    Push the tomato mixture to one side of the pan. To the empty side, add 1 tablespoon of butter. Once the butter melts, add 1 tablespoon of wheat flour (or all-purpose flour/maida) and mix it with the butter until a smooth paste forms.

  7. 7.Combine Sauces

    Gradually pour in 1 cup of milk while continuously stirring to prevent lumps. Mix the milk and flour mixture with the tomato sauce until a uniform, creamy pink sauce forms. Ensure the flame is kept low.

  8. 8.Add Cheese and Pasta Water

    Add 1 cheese cube (or shredded mozzarella) and the reserved 1 cup of pasta water to the sauce. Stir well until the cheese melts and the sauce reaches your desired creamy consistency.

  9. 9.Season and Finish Sauce

    Stir in 1 teaspoon of oregano and mix thoroughly. Allow the sauce to simmer for a minute or two.

  10. 10.Combine with Macaroni
