Follow each step to make the recipe successfully.
Finely chop one onion and one carrot. You can use a manual chopper for this. Ensure carrots are chopped into small pieces to avoid getting stuck in the chopper.
Take 1.5 cups of chickpeas, soaked overnight, and boil them until tender. Add 1/8 teaspoon of baking soda while boiling for even cooking. Mash the boiled chickpeas in a bowl. Peel 1-2 boiled potatoes and add one to the mashed chickpeas for binding, mashing them together thoroughly.
Add the finely chopped onion and carrot mixture to the mashed chickpeas and potato. Mix well.
Season the mixture with salt to taste, 1 teaspoon of chili flakes, 1 teaspoon of red chili powder, and 1 teaspoon of chaat masala. Add 1/4 cup of poha powder (flattened rice powder) to help with binding and crispiness. Mix all ingredients thoroughly by hand until well combined.
Once the mixture is well combined, take small portions and flatten them into round patties (tikkis). You can add a small piece of cheese in the center of each tikki before shaping, if desired.
Heat 2 tablespoons of oil in a pan over medium heat. Once the oil is hot, carefully place the tikkis in the pan. Shallow fry them for about on each side, or until they turn golden brown and crispy.
Transfer the cooked tikkis to a serving plate. Serve hot with green chutney and a side of spicy sweet corn.
