  2. Prepare the Egg Batter

Crack 2 eggs into the bowl with the spice mixture. the eggs vigorously with a spoon until everything is well combined and frothy. Add chopped green coriander leaves and mix them into the egg batter.

  3. Prepare the Vegetables

Wash and dry spinach leaves. Cut the spinach leaves into long strips. Slice the tomato into round pieces and the onion into thin slices. Chop the green chili.

  4. Prepare the Bread

Take fresh bread slices and cut each slice diagonally into two large triangles. Further cut these large triangles into smaller triangles if desired, or arrange them to cover the pan.

  5. Assemble the Omelette in the Pan

Heat 1 tablespoon of Desi ghee (or oil) in a non-stick frying pan over very low heat. Spread the chopped spinach evenly in the pan. Place the round tomato slices on top of the spinach, followed by spreading the thinly sliced onions and chopped green chilies.

  6. Add Egg Mixture and Bread

Pour the prepared egg mixture evenly over the vegetables in the pan, ensuring all vegetables are covered. Carefully arrange the bread triangles on top of the egg and vegetable mixture. Drizzle a little more Desi ghee over the bread pieces for extra crispiness.

  7. Cook and Flip the Omelette

Cook the omelette on very low heat for until the egg is mostly set and the bottom is golden. Place a plate on top of the pan and carefully flip the omelette onto the plate. Then, slide the omelette back into the pan, bread-side down, to cook the bread until crispy.

  8. Garnish and Serve

Sprinkle white sesame seeds over the omelette for added flavor and crunch. Cook for another until the bread is crispy and golden brown. Once cooked, transfer the healthy bread omelette to a serving plate. Cut into slices and serve hot.
