Crush the garlic cloves. Cut the ginger into small pieces and then crush it.
Slice 2 medium-sized onions thinly. Cut the remaining 1 medium-sized onion into big pieces. Cut the green chillies into big pieces.
Take a pan and add the 600 gm chicken pieces. Add the crushed ginger and garlic. Add the sliced onions, green chillies, green cardamom, cinnamon, and cloves. Sprinkle 1 tsp turmeric powder and salt to taste. Pour in 5-6 tablespoons of mustard oil. Crush 1 tsp cumin seeds by hand and add them. Finally, add the 4 dried red chillies and the big onion pieces.
Mix all the ingredients by hand very well, ensuring the chicken pieces are thoroughly coated with the spices and oil.
Place the pan on the stove over low flame. Stir the mixture well. Cover the pan with a lid and cook for on low flame. The chicken will release a lot of water during this time. After , stir again.
Continue cooking on low flame, stirring occasionally, until all the water has and the oil starts to separate from the chicken and gravy. This indicates the chicken is well cooked and the spices are fragrant. Once cooked, turn off the flame.
The Hate Makha Chicken is now ready. Serve hot with rice.
