Place the chicken leg quarters in a bowl, add salt and water, and let it soak for 1 hour. After soaking, drain the water and make deep cuts into the chicken pieces using a knife.

Mix all ingredients well to form a smooth marinade. Apply this second marinade generously over the chicken pieces, ensuring full coverage. Keep the chicken aside to marinate for another 30 minutes.
Place a grill rack on a plate and brush the rack with oil. Carefully place the marinated chicken pieces on the oiled grill rack. Brush the chicken pieces with a little more oil.
Place the grill rack with chicken into a microwave oven. Select the 'Microwave + Grill' option, set the temperature to 300°C, and grill for 20 to 25 minutes. Once done, carefully remove the chicken from the microwave.
Return the chicken to the microwave oven for a second grilling cycle. Select the 'Microwave + Grill' option again and grill for another 15 to 20 minutes until the chicken is cooked through and has a charred, golden-brown finish. Carefully remove the grilled chicken from the microwave.
Transfer the hot grilled chicken to a serving plate and enjoy!
