Follow each step to make the recipe successfully.
Clean and wash 0.5 kg of chicken pieces thoroughly.
In a mixer grinder, combine 1 large onion (cut), 3 green chilies, 1 bunch of curry leaves, 8 garlic cloves, 1 small piece of ginger, 0.75 tbsp chili powder, 1 tbsp turmeric powder, 0.5 tsp garam masala, 0.75 tbsp coriander powder, and salt to taste. Add a little coconut oil and blend everything into a fine, smooth paste.
Transfer the blended paste to the cleaned chicken pieces. Mix well by hand, ensuring all chicken pieces are thoroughly coated with the marinade.
Heat coconut oil in a pan on an induction cooktop (or stove). Once the oil is hot, add 0.5 tsp cumin seeds for flavor and let them sizzle. Then, add the chicken pieces to the pan.
Cover the pan and cook the chicken on a low flame. Occasionally open the lid and stir the chicken to ensure even cooking and prevent sticking. Continue cooking until the chicken is tender and the masala is well roasted and dark brown, approximately .
Once cooked, transfer the chicken fry to a serving plate. Garnish with fresh sliced onions, green chilies, and curry leaves. Serve hot with rice.
