Easy Chicken Fry - Kerala Style

Ingredients

Main Ingredients

  • 0.5 kgChicken

For the Paste

  • 1Large Onion
  • 3Green Chilies
  • 1 bunchCurry Leaves
  • 8Garlic Cloves
  • 1 small pieceGinger
  • 0.75 tbspChili Powder
  • 1 tbspTurmeric Powder
  • 0.5 tspGaram Masala
  • 0.75 tbspCoriander Powder
  • to tasteSalt
  • as neededCoconut Oil

For Tempering

  • 0.5 tspCumin Seeds

Step-by-Step Instructions

  1. 1.Prepare the Chicken

Clean and wash 0.5 kg of chicken pieces thoroughly.

  2. 2.Blend the Paste

In a mixer grinder, combine 1 large onion (cut), 3 green chilies, 1 bunch of curry leaves, 8 garlic cloves, 1 small piece of ginger, 0.75 tbsp chili powder, 1 tbsp turmeric powder, 0.5 tsp garam masala, 0.75 tbsp coriander powder, and salt to taste. Add a little coconut oil and blend everything into a fine, smooth paste.

  3. 3.Marinate the Chicken

Transfer the blended paste to the cleaned chicken pieces. Mix well by hand, ensuring all chicken pieces are thoroughly coated with the marinade.

  4. 4.Cook the Chicken

Heat coconut oil in a pan on an induction cooktop (or stove). Once the oil is hot, add 0.5 tsp cumin seeds for flavor and let them sizzle. Then, add the marinated chicken pieces to the pan.

  5. 5.Simmer and Fry

Cover the pan and cook the chicken on a low flame. Occasionally open the lid and stir the chicken to ensure even cooking and prevent sticking. Continue cooking until the chicken is tender and the masala is well roasted and dark brown, approximately 10-20 minutes.

  6. 6.Serve

Once cooked, transfer the chicken fry to a serving plate. Garnish with fresh sliced onions, green chilies, and curry leaves. Serve hot with rice.
