Add 2 tablespoons of ghee to a pan. Once hot, add dry fruits like cashews and raisins. Fry them until they turn golden brown, then remove them from the pan and set aside.
In the same pan with the remaining ghee, add 1 cup of semiya (vermicelli). Roast the semiya on medium heat, stirring continuously, until it turns golden brown.
Once the semiya is roasted, add 3 cups of hot boiled milk and 1 cup of hot water to the pan. Stir well and let it until the semiya is cooked through and the mixture thickens.
After the semiya is cooked, add ½ cup of sugar to the payasam. Stir until the sugar dissolves completely. Then, add the fried dry fruits and a pinch of cardamom powder.
To maintain a creamy consistency, add 1 cup of milk to the payasam and stir well. Cook for another minute or two until heated through. Serve the creamy and delicious payasam warm.
