Step-by-Step Instructions

Step 1: Prepare the Potato Base

Slice 2-3 medium potatoes thinly with their skin on. Heat 2 tablespoons of olive oil in a hot cast iron skillet. Arrange the potato slices in a single layer to form a base. Sprinkle with salt and freshly cracked black pepper. Cover the skillet and cook on a medium flame for until the potatoes are tender and slightly browned.

Step 2: Chop Vegetables and Meat

While the potatoes are cooking, finely chop 1-2 red peppers, 2-3 stalks of green onions, 1 cup of mushrooms, 1 cup of broccoli florets, 2-3 chicken sausages, 1/2 small red onion, and a 1-inch piece of ginger. Ensure all ingredients are chopped to a similar size for even distribution and cooking.

Step 3: Prepare the Egg Mixture

In a large bowl, crack 10 large eggs. Add the chopped red onions, ginger, red peppers, green onions, mushrooms, broccoli, and chicken sausage to the bowl. Season with salt and freshly cracked black pepper. Mix all ingredients thoroughly with a spoon, but do not whisk vigorously.

Step 4: Assemble and Top the Frittata

Pour the mixed egg and vegetable mixture evenly over the cooked potato base in the cast iron skillet. Distribute spoonfuls of ricotta cheese over the top of the mixture. Grate cheddar cheese generously over the entire frittata.

Step 5: Bake the Frittata

Place the skillet into a preheated oven at 400°F (≈205°C) (approximately 205°C) (200°C (≈390°F) (approximately 390°F)). Bake for approximately , or until the frittata is set, golden brown on top, and slightly puffed. Keep checking to prevent overcooking, as it can cook rapidly.

Step 6: Serve the Frittata

Carefully remove the hot frittata from the oven. Allow it to cool slightly before slicing. Cut a generous slice, revealing the soft, creamy interior with embedded vegetables and potatoes. Garnish with fresh chopped herbs like parsley or chives before serving.

Pro Tips

• Ensure all vegetables are chopped to a similar size for even cooking.

• Keep a close eye on the frittata while it's in the oven, as it can cook rapidly.

• The potatoes form a delicious base, so ensure they are nicely browned before adding the egg mixture.

Recipe Variations

• Substitute chicken sausage with salami or other preferred meats.

• Use different vegetables like spinach, bell peppers, or zucchini.

• Experiment with various cheeses such as goat cheese, mozzarella, or a mix of your favorites.
