  7. Red Onions 1/2 small, chopped
  8. Ginger 1 inch piece, chopped
  9. Salt to taste
  10. Black Pepper to taste, freshly cracked

  2. Cheddar Cheese 1/2 cup, grated

Step-by-Step Instructions

Step 1: Prepare the Potato Base

Slice 2-3 medium potatoes thinly with their skin on. Heat 2 tablespoons of olive oil in a hot cast iron skillet. Arrange the potato slices in a single layer to form a base.
