  • 1 cup, sliced or choppedMushrooms
  • 1 cup, choppedBroccoli Florets
  • 2-3 links, sliced or choppedChicken Sausage
  • 1/2 small, choppedRed Onions
  • 1 inch piece, choppedGinger
  • to tasteSalt
  • to taste, freshly crackedBlack Pepper

For Topping and Garnish

  • 1/2 cupRicotta Cheese
  • 1/2 cup, gratedCheddar Cheese
  • for garnishFresh Herbs (e.g., Parsley, Chives)

Step-by-Step Instructions

  1. 1.Prepare the Potato Base

    Slice 2-3 medium potatoes thinly with their skin on. Heat 2 tablespoons of olive oil in a hot cast iron skillet. Arrange the potato slices in a single layer to form a base. Sprinkle with salt and freshly cracked black pepper. Cover the skillet and cook on a medium flame for 4-5 minutes until the potatoes are tender and slightly browned.

    While the potatoes are cooking, finely chop 1-2 red peppers, 2-3 stalks of green onions, 1 cup of mushrooms, 1 cup of broccoli florets, 2-3 chicken sausages, 1/2 small red onion, and a 1-inch piece of ginger. Ensure all ingredients are chopped to a similar size for even distribution and cooking.

    In a large bowl, crack 10 large eggs. Add the chopped red onions, ginger, red peppers, green onions, mushrooms, broccoli, and chicken sausage to the bowl. Season with salt and freshly cracked black pepper. Mix all ingredients thoroughly with a spoon, but do not whisk vigorously.
