Egg & Vegetable Fried Rice – Asian Style

  • 3 cupsOvernight cooked Jasmine Rice
  • 1/8 teaspoonSesame oil
  • 1/4 teaspoonOyster Sauce
  • 1/8 cupChopped Green Onions
  • 3/4 teaspoonMinced fresh garlic
  • 1/4 cupCanned Carrots & Peas mixture
  • to tasteSalt
  • to tasteBlack Pepper
  • 2, lightly beatenEggs
  • 2 tablespoonsCooking oil

Step-by-Step Instructions

  1. 1.Scramble the Eggs

    Heat some cooking oil in a pan or wok. Gently pour in the lightly beaten eggs and cook until they are lightly scrambled. Once done, dish out the scrambled eggs and set them aside.

  2. 2.Cook the Rice and Vegetables

    In the same wok or pan, heat up 1 tablespoon of cooking oil. Add the overnight cooked jasmine rice and stir it a little. Then, add the minced garlic, sesame oil, oyster sauce, and the canned carrots and peas mixture. Stir fry for approximately 2-3 minutes.

  3. 3.Combine and Season

    Add the previously scrambled eggs back into the pan with the rice and vegetables. Season with salt and pepper to taste. Stir to combine all ingredients well for about 1 minute.

  4. 4.Finish and Serve

    Turn off the heat. Add the chopped spring onions and stir for two seconds to incorporate. Your fresh, simple, and delicious homemade egg & vegetable fried rice is now ready to be served.
