Follow each step to make the recipe successfully.
Heat a non-stick pan. Add 1 bowl of semolina (sooji) to the pan. Pour in some ghee (approximately 1/2 bowl) and begin roasting the semolina on medium-low heat, stirring continuously.
After a few minutes of roasting, add 2 tablespoons of gram flour (besan) to the semolina. Add a little more ghee (about 1-2 tablespoons) and continue roasting until the mixture turns golden brown and releases a fragrant aroma.
Once the semolina mixture is golden brown, add chopped cashews, sliced almonds, raisins, and cardamom seeds (from 4 pods). Mix well and roast for another minute, allowing the dry fruits to become slightly crunchy from the heat.
Carefully pour 3 bowls of water into the semolina mixture. Stir well to combine. Then, add 1/2 bowl of sugar and continue mixing until the sugar dissolves and the halwa starts to thicken.
Once the halwa has thickened, pour in 1 bowl of condensed milk. Stir continuously until all ingredients are well combined and the halwa reaches a thick, creamy consistency, pulling away from the sides of the pan.
Add a final drizzle of ghee (about 1 tablespoon) for extra richness and shine. Mix it in. Transfer the cooked halwa to a serving bowl or plate. Garnish generously with chopped dry fruits, red tutti-frutti, and green tutti-frutti before serving.
