  • 250 gPotatoes
  • 0.5 cupYogurt
  • 2 tspGinger & Garlic Paste
  • 200 gChopped Tomatoes
  • 3 medium (sliced and fried)Onion
  • 0.5 cupOil
  • 4 (soaked in 0.5 cup water)Dry Plum (Aloo Bukhara)
  • 2Green Chilli
  • 1 bunchFresh Coriander
  • 1Lemon
  • 1/4 cup milk + food colorOrange Food Color
  • 1 tbspKewra Water

  • 6-8Black Peppercorns
  • 3-4Cloves
  • 2Green Cardamom
  • 1Black Cardamom
  • 1 small pieceCinnamon Stick
  • 1Star Anise
  • 1Bay Leaf

Step-by-Step Instructions

  1. 1.Prepare Blended Paste

    In a blender, combine 0.5 cup yogurt, most of the fried onions (reserve some for garnish), and a little meat broth. Blend until smooth to create a paste.

  2. 2.Sauté Whole Spices

    In a large pot, heat 0.5 cup oil. Add all the whole garam masala (cumin seeds, black peppercorns, cloves, green cardamom, black cardamom, cinnamon stick, star anise, bay leaf). Fry for 1-2 minutes until fragrant.

  3. 3.Add Ginger Garlic and Tomatoes

    Add 2 teaspoons of ginger garlic paste to the pot and fry for 1-2 minutes. Then, add 200 grams of chopped tomatoes and mix well.

  4. 4.Add Powdered Spices

    Add 0.5 teaspoon turmeric powder, 0.5 teaspoon cumin powder, 1 teaspoon red chili powder (or to taste), 1.5 teaspoon coriander powder, and 0.5 teaspoon jayfal & jawtri powder (1/4 tsp each). Mix all the spices thoroughly with the tomatoes.

  5. 5.Add Meat and Seasoning

    Add salt to taste and 0.5 teaspoon Chinese salt (optional). Add the 0.5 kg boiled meat along with its broth. Stir well and cook until the gravy starts to thicken.

  6. 6.Add Blended Paste and Dry Plums

    Pour in the blended yogurt and fried onion paste. Add the 4 dry plums (aloo bukhara) soaked in 0.5 cup water. Stir and cook, covering the pot for 10-15 minutes on medium heat. If the gravy is still too thin, increase the heat to dry it to a korma-like consistency.

  7. 7.Add Potatoes, Green Chillies, and Coriander

    Once the gravy has thickened and oil separates, add the 250 grams of boiled potatoes. Add 2 green chilies and a handful of fresh coriander. Mix gently and cook for a few minutes until the oil rises to the surface.

  8. 8.Layering Rice

    In a separate large, wide pot (to prevent sticking), add a very thin layer of water at the bottom. Then, spread half of the 0.5 kg boiled Sela rice evenly.

  9. 9.Layer Meat Curry

    Carefully spread half of the prepared meat curry over the rice layer. Place a few lemon slices and sprinkle some fresh coriander on top of the curry.

  10. 10.Add Remaining Rice

    Add the remaining boiled rice on top of the meat curry layer, spreading it evenly.

  11. 11.Final Touches for Dum

    Drizzle the orange food color (mixed in 1/4 cup milk) over the rice. Sprinkle the remaining fresh coriander and fried onions. Add 1 tablespoon of kewra water. Use a spoon to make small holes in the rice, allowing steam to penetrate for better dum.

  12. 12.Dum Cooking

    Cover the pot tightly with aluminum foil and then a lid. Cook on high flame for 2-3 minutes, then reduce the heat to low and cook for 15 minutes to allow the biryani to steam (dum).

  13. 13.Serve

    Once done, gently mix the biryani from the bottom up to combine the layers. Dish out and serve hot.
