  • 250 gramsBella mushrooms (sliced)

  • 2.5 cupsCooked rice (basmati, cooled)
  • 0.25 teaspoonSesame oil
  • 3Scallions (spring onions, sliced)

Step-by-Step Instructions

  1. 1.Heat Oil

    Heat 2 tablespoons of cooking oil (like sunflower oil) in a saucepan or wok over high heat. Swirl the pan to coat the bottom evenly.

  2. 2.Sauté Mushrooms

    Add 250 grams of sliced Bella mushrooms to the hot oil. Stir-fry them for a couple of minutes until they start to brown.

  3. 3.Add Broccoli

    Add 100 grams of broccoli florets to the pan with the mushrooms. Continue to stir-fry on high heat for a few minutes.

  4. 4.Season with Curry Powder

    Sprinkle 1 tablespoon of curry powder over the vegetables. Mix well to coat the mushrooms and broccoli. Reduce the heat to medium immediately after adding the curry powder to prevent burning.

    Add 1 teaspoon of chili paste to the vegetables. Stir well to incorporate the chili paste, ensuring all vegetables are coated for a bit of a kick.
