Heat 2 tablespoons of cooking oil (like sunflower oil) in a saucepan or wok over high heat. Swirl the pan to coat the bottom evenly.
Add 250 grams of sliced Bella mushrooms to the hot oil. Stir-fry them for a couple of minutes until they start to brown.
Add 100 grams of broccoli florets to the pan with the mushrooms. Continue to stir-fry on high heat for a few minutes.
Sprinkle 1 tablespoon of curry powder over the vegetables. Mix well to coat the mushrooms and broccoli. the heat to medium immediately after adding the curry powder to prevent burning.
Add 1 teaspoon of chili paste to the vegetables. Stir well to incorporate the chili paste, ensuring all vegetables are coated for a bit of a kick.
Pour 2 tablespoons of soy sauce into the pan. Mix thoroughly with the vegetables. The soy sauce will provide the necessary saltiness, so no additional salt is required.
Add 2.5 cups of cooked and cooled rice to the pan. Gently fold the rice into the vegetables and seasonings until everything is well combined and the rice is evenly coated with the curry mixture.
Drizzle 0.25 teaspoon of sesame oil over the fried rice. Stir gently to distribute the sesame oil, which adds an amazing aroma and flavor.
Add half of the sliced scallions (spring onions) to the fried rice and give it a quick toss. The remaining scallions will be used for garnish when serving.
Transfer the curry fried rice to a serving plate. Garnish with the remaining fresh scallions and serve hot. Enjoy your delicious and flavorful meal!
