Take 4-5 medium-sized red onions and thinly slice them. Transfer the sliced onions into a large mixing bowl.
Add 1 egg to the sliced onions. Then, add 1 cup of chickpea flour (besan), 1.5 tablespoons of red chili powder, and 1 teaspoon of salt. Also, add 1 teaspoon of cumin seeds.
Finely chop 2-3 green chilies using kitchen scissors and add them to the bowl. Thoroughly mix all the ingredients by hand until the onions are well coated and a thick batter forms. No additional water is typically needed as the onions release moisture.
Heat oil for deep frying in a pan over medium-high heat. Once the oil is hot, carefully drop small portions of the onion mixture into the hot oil using a spoon or your hands. Fry in batches for per batch, or until golden brown and crispy.
Once fried to a golden crisp, remove the pakoras from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite chutney or sauce.
