Follow each step to make the recipe successfully.
Wash and thoroughly dry the okra. Trim both ends of each okra pod. Carefully slice each okra lengthwise into thin strips.
In a large mixing bowl, add the sliced okra. Add turmeric powder, red chilli powder, black pepper powder, rice flour, salt, and chickpea flour (besan) over the okra.
Using your hands, gently mix all the ingredients until the okra strips are evenly coated with the flour and spice mixture. Ensure each piece is well covered.
Heat oil in a deep pan or kadai over medium-high heat for deep frying. Once the oil is hot, carefully add the coated okra strips in batches, ensuring not to overcrowd the pan.
Fry the okra for approximately per batch, stirring occasionally, until it turns golden brown and becomes perfectly crispy.
Once crispy, remove the fried okra using a slotted spoon and place it on a plate lined with paper towels to drain any excess oil.
Transfer the crispy fried okra to a serving bowl. Sprinkle generously with peri peri masala according to your taste preference.
Serve the crispy kurkuri bhindi immediately as a delicious snack or a crunchy side dish.
