Ingredients

  • 1/4 CupDesi Ghee (Clarified Butter)
  • 100 gPineapple (canned, chopped)
  • 1500 mlFresh Milk
  • 1/4 cup or to tasteSugar
  • 1/4 cupChopped Cashews nuts
  • 1/4 cupChopped Almonds
  • 1/2 CupMilk Powder
  • 125 gKhoya
  • 1/2 TspCardamom Powder
  • 1/2 TspPineapple Essence

Step-by-Step Instructions

  1. 1.Sauté Pineapple

    Heat 1/4 cup of Desi Ghee in a pan. Add 100g of chopped pineapple and sauté for 2-3 minutes until slightly softened and fragrant.

  2. 2.Set Aside Pineapple

    Transfer the sautéed pineapple into a bowl and set it aside. Keep the ghee in the pan for the next step.

  3. 3.Reduce Milk

    Pour 1500 ml of fresh milk into the same pan. Bring it to a boil and then reduce the heat, stirring occasionally, until the milk reduces to half its original volume and thickens.

  4. 4.Add Sugar and Nuts

    Once the milk has reduced, add 1/4 cup of sugar (or to taste), 1/4 cup of chopped cashews, and 1/4 cup of chopped almonds. Mix well to combine.

  5. 5.Incorporate Milk Powder

    Add 1/2 cup of milk powder to the milk mixture. Stir continuously to ensure there are no lumps and the powder is fully dissolved.

  6. 6.Add Roasted Pineapple

    Return the roasted pineapple (from Step 2) to the pan with the milk mixture. Mix gently.

  7. 7.Add Khoya and Cook

    Add 125g of khoya (milk solids) to the mixture. Cook for another 5 minutes, stirring constantly, until the khoya is fully incorporated and the mixture thickens further.

  8. 8.Flavor the Dessert

    Remove the pan from heat. Stir in 1/2 tsp of cardamom powder and 1/2 tsp of pineapple essence. Mix thoroughly.

  9. 9.Chill and Serve

    Transfer the dessert to a serving bowl. Let it cool down to room temperature, then refrigerate until thoroughly chilled. Serve cold, garnished with pineapple slices or additional nuts if desired.
