Coconut Masala for Sambar – South Indian Style

Ingredients

For Sambar Masala

  • 1 cupGrated Coconut
  • 1 piece (lemon size)Asafoetida (Kayam)
  • 2-3Small Onions
  • 3Broken Red Chili
  • 1 sprigCurry Leaves
  • 5-6Garlic Pods
  • 1 tbspFenugreek Seeds
  • 1 tbspUrad Dal
  • 1 tspJeera (Cumin)
  • 2 tspOil

Step-by-Step Instructions

  1. 1.Fry Asafoetida

    Heat 2 teaspoons of oil in a pan. Add the lemon-sized piece of asafoetida (kayam) and fry until it becomes crisp, approximately 15-20 seconds.

  2. 2.Remove Asafoetida

    Carefully remove the fried asafoetida from the pan and set it aside. It will be added back later.

  3. 3.Sauté Remaining Ingredients

    Add all the remaining ingredients to the same pan with the residual oil: 1 cup grated coconut, 2-3 small onions, 3 broken red chilies, 1 sprig of curry leaves, 5-6 garlic pods, 1 tablespoon fenugreek seeds, 1 tablespoon urad dal, and 1 teaspoon jeera. Sauté on a medium flame, stirring continuously.

  4. 4.Roast Until Golden Brown

    Continue to sauté the mixture until its color changes from light brown to a rich golden brown, indicating that the coconut and spices are well roasted and aromatic. This process should take about 5-7 minutes, or until the desired color is achieved.

  5. 5.Combine with Fried Asafoetida

    Once the mixture reaches a golden brown color, add the previously fried crisp asafoetida back into the pan. Mix well to combine all the flavors.

  6. 6.Grind to a Paste

    Allow the roasted mixture to cool down completely. Once cooled, transfer it to a blender and grind it into a fine, smooth paste. Add a little water if necessary to achieve the desired consistency for the paste.
