  • 1 tbspTurmeric Powder

  • 750 g, cut into piecesChicken

Step-by-Step Instructions

  1. 1.Temper Spices

    Heat cooking oil in a pan. Add 1 tablespoon of mustard seeds, 4 finely chopped green chilies, and a few sprigs of curry leaves. Let them splutter.

  2. 2.Sauté Onions

    Add 3 large finely chopped onions to the pan. Add salt to taste and sauté until the onions turn golden brown and caramelized, about 5-7 minutes.

  3. 3.Add Tomatoes and Ginger-Garlic Paste

    Once onions are sautéed, add 1 chopped tomato and 2 tablespoons of ginger-garlic paste. Sauté well until the tomatoes soften and the raw smell of ginger-garlic paste disappears, about 3-5 minutes.

  4. 4.Add Dry Spices

    Add 1 tablespoon of turmeric powder and 2 tablespoons of chili powder to the mixture. Mix thoroughly and sauté for about 1 minute until the spices are well combined and fragrant.

  5. 5.Cook Chicken

    Add 750g of chicken pieces to the pan. Mix the chicken thoroughly with the masala, ensuring all pieces are coated. Cover the pan and cook for 20 minutes without adding any water. The chicken will release its own juices and cook in the masala, becoming tender and forming a thick thokku.

  6. 6.Garnish and Serve

    Once the chicken is cooked and the thokku has reached a desired consistency, garnish with fresh chopped coriander leaves. Serve hot.
