Chicken Railway Curry – Indian Style

Ingredients

For Marination

  • 500 gmsBoneless Chicken
  • 1 tspSalt
  • 1/2 tspTurmeric powder
  • 1 tspChilli powder
  • 1 tbspGinger garlic paste
  • 2-3 tbspCurd

For Curry

  • 2-3 tbspMustard oil
  • 1 tspCumin seeds
  • 1Whole black cardamom
  • 2Green cardamoms
  • 3Peppercorns
  • 2Cloves
  • 1 smallCinnamon stick
  • 2 medium, finely choppedOnions
  • 2, choppedGreen chilies
  • 1 tbspGinger garlic paste
  • 1 tspChilli powder
  • 1/2 tspTurmeric powder
  • 1 tspCoriander powder
  • 1/2 tspCumin powder
  • 2 medium, pureedTomatoes
  • 1/2 cup, crushedFried onions
  • 1/2 cupWater
  • to tasteSalt
  • 1/2 tspGaram masala
  • 2 small whole onionsSirke wala pyaaz (pickled onions)
  • for garnishCoriander leaves

Step-by-Step Instructions

  1. 1.Prepare Chicken for Marination

    Take 500 gms of boneless chicken, washed and chopped into desired pieces. Place it in a bowl for marination.

  2. 2.Marinate the Chicken

    To the chicken, add 1 tsp salt, 1/2 tsp turmeric powder, 1 tsp chili powder, 1 tbsp ginger garlic paste, and 2-3 tbsp curd. Mix all ingredients thoroughly until the chicken is well coated. Let it marinate for 30 minutes.

  3. 3.Prepare the Base Spices

    Heat 2-3 tbsp mustard oil in a pressure cooker. Once the oil is hot, add 1 tsp cumin seeds, 1 whole black cardamom, 2 green cardamoms, 3 peppercorns, 2 cloves, and 1 small cinnamon stick. Sauté for a few seconds until fragrant.

  4. 4.Sauté Onions and Green Chillies

    Add 2 finely chopped medium onions to the cooker. Stir and cook until the onions turn translucent and slightly change color (approx. 5-7 minutes). Then, add 2 chopped green chilies and continue to sauté for another minute.

  5. 5.Cook Marinated Chicken

    Add the marinated chicken to the cooker. Stir and mix thoroughly with the sautéed onions and spices. Let it cook on medium-high flame, stirring in intervals, until the chicken starts to change color and some moisture is released (approx. 5-7 minutes).

  6. 6.Add More Spices

    Add another 1 tbsp ginger garlic paste, 1 tsp chili powder, 1/2 tsp turmeric powder, 1 tsp coriander powder, and 1/2 tsp cumin powder to the chicken. Mix well and cook until the oil separates from the mixture (approx. 5-7 minutes), indicating the spices are well cooked.

  7. 7.Incorporate Tomatoes and Fried Onions

    Add 2 medium pureed tomatoes to the chicken. Mix thoroughly and cook on high flame until the tomatoes are well incorporated and the mixture thickens (approx. 5-7 minutes). Then, add 1/2 cup of crushed fried onions and mix well.

  8. 8.Simmer with Water and Finish

    Add 1/2 cup of water to create the gravy. Add salt to taste and 1/2 tsp garam masala. Mix everything well. Add 2 small whole pickled onions (sirke wala pyaaz) for an authentic touch. Cover the pressure cooker and cook for 1 whistle, or simmer on medium flame until the chicken is tender and the gravy reaches your desired consistency (approx. 10-15 minutes).

    Once cooked, transfer the Chicken Railway Curry to a serving bowl. Garnish generously with fresh coriander leaves. Serve hot with rice, paratha, or naan and enjoy your meal.
