Fry the thinly sliced chicken cutlets in a frying pan until lightly browned on both sides.
Transfer the fried chicken cutlets to a baking sheet and bake in a preheated oven at 400°F (200°C) for 10-15 minutes to ensure they are cooked through.
While the chicken bakes, doctor up the jarred marinara sauce by adding Italian seasoning, salt, and pepper to taste. Let the sauce simmer on the stovetop.
Place the used frying pan in the sink and fill with water to begin the cleaning process.
Place a pot of water on the stove and bring it to a boil. Add salt to the boiling water.
Add rotini pasta to the boiling salted water and cook according to package directions, typically 10-12 minutes, until al dente.
Once the chicken is cooked through, remove the baking sheet from the oven.
Spoon a generous amount of the simmering marinara sauce over each chicken cutlet on the baking sheet.
Place slices of mozzarella cheese on top of the sauced chicken cutlets. Cut the cheese slices if necessary to fit the chicken pieces.
Return the chicken to the oven for another 5-10 minutes, or until the mozzarella cheese is melted and bubbly.
Drain the cooked rotini pasta and mix it with the remaining marinara sauce in the pot.
Carefully plate a chicken parmesan cutlet alongside a serving of the sauced rotini pasta. Serve hot.
