Chicken Noodles Cheese Cutlet

  • 6 kgPotatoes

  • 750 gCheese (block, e.g., Mozzarella)
  • 25Eggs
  • 6 litersCold Pressed Gingelly Oil

  • 50 gFine Chopped Coriander Leaves
  • 50 gFine Chopped Mint Leaves
  • 100 gHand-Ground Ginger & Garlic Paste
  • 150 gHome-Made Curry Masala

Step-by-Step Instructions

  1. 1.Clean and Prepare Chicken

    Wash the whole chickens thoroughly under running water in a large basin. Transfer the cleaned chickens to a large tray.

  2. 2.Clean and Prepare Potatoes

    Wash the potatoes thoroughly under running water in a large basin. Transfer the cleaned potatoes to a large tray.

  3. 3.Set Up Cooking Stations

    Place two large pots over separate wood fires. Pour water into both pots.

  4. 4.Steam Chicken

    Place a cloth inside one large pot to create a steaming surface. Arrange the whole chickens on the cloth, cover the pot, and steam until cooked through (approximately 30-40 minutes).

  5. 5.Boil Potatoes

    Add crystal salt to the other pot with boiling water. Carefully add the washed potatoes, cover the pot, and boil until tender (approximately 20-30 minutes).

  6. 6.Remove Cooked Chicken

    Once steamed, carefully remove the cooked chickens from the pot and transfer them to a large tray.

  7. 7.Remove Boiled Potatoes

    Once boiled and tender, remove the potatoes from the pot using a slotted spoon and place them in a large tray.

  8. 8.Shred Chicken

    Allow the cooked chicken to cool slightly, then shred the meat by hand, discarding the bones.

  9. 9.Peel and Mash Potatoes

    Peel the skin off the boiled potatoes. Mash them thoroughly using a potato masher or by hand until smooth.

  10. 10.Combine Chicken and Potatoes

    Transfer the mashed potatoes to a very large mixing tray. Add the shredded chicken to the same tray.

  11. 11.Add Herbs and Spices

    Add the finely chopped onion, green chili, coriander leaves, mint leaves, hand-ground ginger & garlic paste, home-made curry masala, and crystal salt to the chicken and potato mixture.

  12. 12.Mix the Cutlet Base

    Thoroughly mix all the ingredients by hand until a well-combined, dough-like mixture is formed.

  13. 13.Crush Instant Noodles

    Pour the uncooked instant noodles into a large tray. Crush them by hand into small, fine pieces.

  14. 14.Whisk Eggs

    Crack the eggs into a bowl and whisk them well until the yolks and whites are fully combined.

  15. 15.Cut Cheese

    Cut the cheese block into small, uniform cubes.

  16. 16.Form Cutlets with Cheese

    Take a portion of the chicken-potato mixture, flatten it in your palm, place a cheese cube in the center, and carefully shape it into an oval cutlet, ensuring the cheese is fully enclosed.

  17. 17.Coat Cutlets

    Dip each formed cutlet into the whisked egg mixture, ensuring it's fully coated. Then, roll the egg-coated cutlet in the crushed instant noodles, pressing gently to make sure the noodles adhere well to the surface.
