Follow each step to make the recipe successfully.
Gather a large variety of vegetables including onions, tomatoes, potatoes, cabbage, green beans, okra, raw bananas, drumsticks, carrots, radish, and eggplant. Wash all vegetables thoroughly in a large basin with water.
Finely chop tomatoes and slice onions. Slice carrots, radish, and drumsticks into rounds or smaller pieces. Shred cabbage. Chop potatoes and eggplant into bite-sized pieces.
Set up a clay pot on a wood fire. Wash rice and moong dal. Pour milk into the pot and bring it to a boil. Once the milk overflows, add the washed rice and moong dal. Add crushed jaggery, cashews, raisins, cardamom pods, and ghee. Stir well until cooked and creamy. Decorate the pot with turmeric leaves and flowers.
Place the cooked Pongal on a banana leaf as an offering. Break coconuts, light camphor, and offer prayers. Serve the Pongal to the people.
Set up multiple large cooking pots on wood fires. Add sesame oil to a pot. Once hot, add mustard seeds, cumin seeds, bay leaves, cinnamon sticks, and star anise. Add small red chilies and curry leaves. Stir well. Add sliced onions and chopped tomatoes, until soft. Add turmeric paste, garlic paste, and chili powder, mixing thoroughly.
Add the chopped vegetables (carrots, radish, drumsticks, raw bananas, green beans, potatoes, eggplant) to the sambar base. Add tamarind pulp and mix well. Add soaked rice grains (for thickening) and okra. Finally, add chickpeas and sufficient water. Stir and cook until all vegetables are tender and the sambar thickens.
In separate woks, prepare the various vegetable fries. For potato fry, chopped potatoes with oil and spices until tender and slightly browned. For eggplant fry, chopped eggplant with chili paste and deep fry until cooked. For cabbage fry, shredded cabbage with moong dal, oil, and spices. For greens fry, chopped greens (spinach/amaranth) with oil and spices until cooked.
Prepare vada batter (likely from soaked and ground chana dal with spices). Form into small patties and deep fry in hot oil until golden brown and crispy. Slice raw bananas, with chili paste, and deep fry until golden brown.
Deep fry appalam (papad) in hot oil until puffed and crispy. For payasam, boil milk and add spaghetti (or vermicelli). Cook until soft, then add sugar and cardamom powder to taste.
Clean and prepare large banana leaves for serving. Serve generous portions of white rice. Arrange the various dishes around the rice: Pongal, vada, raw banana fry, eggplant fry, appalam, cabbage fry, greens fry, potato fry, sambar, rasam, curd, and pickle. Serve the meal to the people in the old age home.
