In a bowl, combine boneless chicken , 1 egg, 1/2 tsp salt, 1/2 tsp black pepper powder, 2 tablespoons cornflour, and 1 tablespoon all-purpose flour. Mix well until the chicken is evenly coated. Cover and for .
Heat cooking oil in a pan. Add the chicken pieces to the hot oil and fry on medium flame until they turn golden and crispy. Once fried, remove the chicken from the oil and set aside.
In a separate pan, heat 2-3 tablespoons of cooking oil. Add 1 tablespoon chopped garlic and 1 tablespoon chopped ginger. Mix well and for a minute until fragrant. Add 10-12 green chilies (cut lengthwise) and mix well, cooking for another minute.
Add the fried chicken to the pan with the garlic, ginger, and green chilies. Add a 2-inch piece of ginger and mix everything well. Pour in 2 tablespoons soy sauce, 2 tablespoons chili garlic sauce, and 2 tablespoons oyster sauce. Season with 1/4 tsp salt, 1/4 tsp black pepper powder, and 1 teaspoon sugar. Mix thoroughly to coat the chicken.
Add 1/4 cup chicken stock to the pan. Mix well and cook on high flame for until the sauce thickens slightly. Add 2-3 green chilies (cut lengthwise), a 1-inch piece of ginger , and chopped spring onion leaves. Mix well and cook for another minute. The Chicken Chilli Dry is now ready.
In another pan, heat 2-3 tablespoons of cooking oil. Pour in 1 egg and scramble it, cooking for about until fully cooked. Add 1 tablespoon chopped garlic, 3 tablespoons chopped carrots, and 1/2 cup chopped cabbage. Mix well with the scrambled egg and cook for until the vegetables are slightly tender-crisp.
Add 250g of boiled rice to the pan with the egg and vegetables. Sprinkle 1 tablespoon chicken powder, 1 teaspoon sugar, 1/2 tsp black pepper powder, and 1/2 tsp salt. Add 1-2 tablespoons chopped spring onion leaves and 1 tablespoon soy sauce. Mix everything thoroughly until all ingredients are well combined and the rice is heated through.
Serve the Chicken Chilli Dry alongside the Fried Rice. Garnish with additional chopped spring onion leaves if desired. This dish serves 4 people.
