For Chicken Chilli Dry (Marinade)

  • 500gBoneless Chicken (Julienne)
  • 1Egg (whisked)
  • 1/2 tsp or to tasteSalt
  • 1/2 tspBlack Pepper Powder
  • 2 TBSCornflour
  • 1 TBSMaida (All-Purpose Flour)

For Chicken Chilli Dry (Cooking)

  • for fryingCooking Oil
  • 2-3 TBSCooking Oil
  • 1 TBSLehsan (Garlic) chopped
  • 1 TBSAdrak (Ginger) chopped
  • 10-12 (cut lengthwise)Hari Mirch (Green Chillies)
  • all from marinadeFried Chicken
  • 2-inch pieceAdrak (Ginger) Julienne
  • 2 TBSSoy Sauce
  • 2 TBSChilli Garlic Sauce
  • 2 TBSOyster Sauce
  • 1/4 tsp or to tasteNamak (Salt)
  • 1/4 tspKali Mirch Powder (Black Pepper Powder)
  • 1 TSPSugar
  • 1/4 cupYakhni (Chicken Stock)
  • 2-3 (cut lengthwise)Hari Mirch (Green Chillies)
  • 1-inch pieceAdrak (Ginger) Julienne
  • for garnishHara Pyaz (Spring Onion) Leaves chopped

For Fried Rice

  • 2-3 TBSCooking Oil
  • 1Anda (Egg) whisked
  • 1 TBSLehsan (Garlic) chopped
  • 3 TBSGajar (Carrots) chopped
  • 1/2 cupBand Gobhi (Cabbage) chopped
  • 250gChawal (Rice) Boiled
  • 1 TBSChicken Powder
  • 1 TSPSugar
  • 1/2 tsp or to tasteKali Mirch Powder (Black Pepper Powder)
  • 1/2 tsp or to tasteNamak (Salt)
  • 1-2 TBSHara Pyaz (Spring Onion) Leaves chopped
  • 1 TBSSoy Sauce

Step-by-Step Instructions

  1. 1.Marinate Chicken

    In a bowl, combine boneless chicken julienne, 1 whisked egg, 1/2 tsp salt, 1/2 tsp black pepper powder, 2 tablespoons cornflour, and 1 tablespoon all-purpose flour. Mix well until the chicken is evenly coated. Cover and marinate for 15 minutes.

  2. 2.Fry Chicken

    Heat cooking oil in a pan. Add the marinated chicken pieces to the hot oil and fry on medium flame until they turn golden and crispy. Once fried, remove the chicken from the oil and set aside.

  3. 3.Prepare Chilli Dry Base

    In a separate pan, heat 2-3 tablespoons of cooking oil. Add 1 tablespoon chopped garlic and 1 tablespoon chopped ginger. Mix well and sauté for a minute until fragrant. Add 10-12 green chilies (cut lengthwise) and mix well, cooking for another minute.

  4. 4.Combine Chicken and Sauce

    Add the fried chicken to the pan with the garlic, ginger, and green chilies. Add a 2-inch piece of ginger julienne and mix everything well. Pour in 2 tablespoons soy sauce, 2 tablespoons chili garlic sauce, and 2 tablespoons oyster sauce. Season with 1/4 tsp salt, 1/4 tsp black pepper powder, and 1 teaspoon sugar. Mix thoroughly to coat the chicken.

  5. 5.Finish Chicken Chilli Dry

    Add 1/4 cup chicken stock to the pan. Mix well and cook on high flame for 1 minute until the sauce thickens slightly. Add 2-3 green chilies (cut lengthwise), a 1-inch piece of ginger julienne, and chopped spring onion leaves. Mix well and cook for another minute. The Chicken Chilli Dry is now ready.

  6. 6.Prepare Fried Rice Base

    In another pan, heat 2-3 tablespoons of cooking oil. Pour in 1 whisked egg and scramble it, cooking for about 1 minute until fully cooked. Add 1 tablespoon chopped garlic, 3 tablespoons chopped carrots, and 1/2 cup chopped cabbage. Mix well with the scrambled egg and cook for 1 minute until the vegetables are slightly tender-crisp.

  7. 7.Combine Rice and Seasonings

    Add 250g of boiled rice to the pan with the egg and vegetables. Sprinkle 1 tablespoon chicken powder, 1 teaspoon sugar, 1/2 tsp black pepper powder, and 1/2 tsp salt. Add 1-2 tablespoons chopped spring onion leaves and 1 tablespoon soy sauce. Mix everything thoroughly until all ingredients are well combined and the rice is heated through.

    Serve the Chicken Chilli Dry alongside the Fried Rice. Garnish with additional chopped spring onion leaves if desired. This dish serves 4 people.
