  1. Boneless Chicken (Julienne) 500g

  4. Black Pepper Powder 1/2 tsp
  5. Cornflour 2 TBS
  6. Maida (All-Purpose Flour) 1 TBS

All Ingredients - For Chicken Chilli Dry (Cooking)

  1. Cooking Oil for frying
  2. Cooking Oil 2-3 TBS
  3. Lehsan (Garlic) chopped 1 TBS
  4. Adrak (Ginger) chopped 1 TBS
  5. Hari Mirch (Green Chillies) 10-12 (cut lengthwise)
  6. Fried Chicken all from marinade
  7. Adrak (Ginger) Julienne 2-inch piece
  8. Soy Sauce 2 TBS
  9. Chilli Garlic Sauce 2 TBS
  10. Oyster Sauce 2 TBS
  11. Namak (Salt) 1/4 tsp or to taste
  12. Kali Mirch Powder (Black Pepper Powder) 1/4 tsp
  13. Sugar 1 TSP
  14. Yakhni (Chicken Stock) 1/4 cup
  15. Hari Mirch (Green Chillies) 2-3 (cut lengthwise)
  16. Adrak (Ginger) Julienne 1-inch piece
  17. Hara Pyaz (Spring Onion) Leaves chopped for garnish

Step-by-Step Instructions

Step 1: Marinate Chicken

In a bowl, combine boneless chicken , 1 egg, 1/2 tsp salt, 1/2 tsp black pepper powder, 2 tablespoons cornflour, and 1 tablespoon all-purpose flour. Mix well until the chicken is evenly coated. Cover and for .

Step 2: Fry Chicken

Heat cooking oil in a pan. Add the chicken pieces to the hot oil and fry on medium flame until they turn golden and crispy. Once fried, remove the chicken from the oil and set aside.

Step 3: Prepare Chilli Dry Base

In a separate pan, heat 2-3 tablespoons of cooking oil. Add 1 tablespoon chopped garlic and 1 tablespoon chopped ginger. Mix well and for a minute until fragrant. Add 10-12 green chilies (cut lengthwise) and mix well, cooking for another minute.

Step 4: Combine Chicken and Sauce

Add the fried chicken to the pan with the garlic, ginger, and green chilies. Add a 2-inch piece of ginger and mix everything well. Pour in 2 tablespoons soy sauce, 2 tablespoons chili garlic sauce, and 2 tablespoons oyster sauce. Season with 1/4 tsp salt, 1/4 tsp black pepper powder, and 1 teaspoon sugar. Mix thoroughly to coat the chicken.

Step 5: Finish Chicken Chilli Dry

Add 1/4 cup chicken stock to the pan. Mix well and cook on high flame for until the sauce thickens slightly. Add 2-3 green chilies (cut lengthwise), a 1-inch piece of ginger , and chopped spring onion leaves. Mix well and cook for another minute. The Chicken Chilli Dry is now ready.

Step 6: Prepare Fried Rice Base

In another pan, heat 2-3 tablespoons of cooking oil. Pour in 1 egg and scramble it, cooking for about until fully cooked. Add 1 tablespoon chopped garlic, 3 tablespoons chopped carrots, and 1/2 cup chopped cabbage. Mix well with the scrambled egg and cook for until the vegetables are slightly tender-crisp.

Step 7: Combine Rice and Seasonings

Add 250g of boiled rice to the pan with the egg and vegetables. Sprinkle 1 tablespoon chicken powder, 1 teaspoon sugar, 1/2 tsp black pepper powder, and 1/2 tsp salt. Add 1-2 tablespoons chopped spring onion leaves and 1 tablespoon soy sauce. Mix everything thoroughly until all ingredients are well combined and the rice is heated through.

Step 8: Serve

Serve the Chicken Chilli Dry alongside the Fried Rice. Garnish with additional chopped spring onion leaves if desired. This dish serves 4 people.
