Step-by-Step Instructions

Follow each step to make the recipe successfully.

  1. Prepare Kheer Base

Pour 1 liter of milk into a blender. Add 2 slices of bread, 4 tablespoons of milk powder, and 1 cup of boiled rice. Blend until the mixture is smooth and creamy.

  2. Start Cooking Kheer

Pour 1 liter of milk into a large pot and bring it to a gentle boil. Once boiling, add the blended milk mixture from the blender to the pot. Stir well to combine.

  3. Add Flavoring

Crush 5-6 green cardamom pods using a mortar and pestle. Add the crushed cardamom to the kheer mixture in the pot.

  4. Thicken the Kheer

Continue to cook the kheer on medium heat, stirring continuously to prevent sticking and ensure even cooking. Cook until the kheer thickens to a desired consistency.

  5. Prepare Caramel

In a separate small pan, add 1 cup of sugar. Heat on medium-low flame, stirring occasionally, until the sugar melts and into a rich golden-brown liquid.

  6. Combine Caramel

Carefully pour the hot sugar into the kheer mixture in the large pot. Stir immediately and continuously to incorporate the caramel evenly and prevent it from clumping. The kheer will turn a beautiful caramel color.

  7. Final Cooking

Continue to cook the caramel kheer for a few more minutes, stirring constantly, until it reaches the final desired thickness.

  8. Prepare Garnish

On a cutting board, slice 1/4 cup of almonds for garnish.

  9. Serve

Pour the prepared caramel kheer into a large serving bowl. Garnish generously with the sliced almonds. Serve warm or chilled.
