    Take 250g of fresh broccoli. Carefully cut the florets from the main stem, ensuring they are separated into manageable pieces.

  2. 2.Blanch the Broccoli

    Place a pot on the stove and add water. Add 1 teaspoon of salt to the water. Bring the water to a boil. Once boiling, carefully add the broccoli florets to the pot. Cook for approximately 2-3 minutes until the broccoli is bright green and slightly tender.

  3. 3.Shock the Broccoli

    Using a slotted spoon or strainer, remove the blanched broccoli from the boiling water and immediately transfer it to a bowl filled with cold water. This stops the cooking process and helps retain the broccoli's vibrant color. Let it cool for about 1-2 minutes, then drain the water.

  4. 4.Chop the Broccoli

    Transfer the cooled and drained broccoli to a cutting board. Using a knife, finely chop the broccoli florets into small, uniform pieces. This will ensure they mix well and cook evenly in the omelette.

    Crack 3 eggs into a clean glass bowl. Whisk the eggs thoroughly with a fork until the yolks and whites are well combined and slightly frothy. Season the eggs with a pinch of salt and pepper, then whisk again.
