Step-by-Step Instructions

Follow each step to make the recipe successfully.

  1. Prepare the Turkey

Wash the whole turkey thoroughly and pat it dry completely, both inside and out, using paper towels.

  2. Marinate the Turkey

Prepare the marinade (refer to the video description for specific ingredients). Stir the marinade well in a bowl. Spoon the marinade over the turkey and massage it thoroughly into the turkey's skin, ensuring it's coated inside and out. Cover the turkey and refrigerate it overnight.

  3. Prepare the Biryani Rice

The next day, heat oil in a pot on the stove. Add basmati rice to the pot. Sprinkle '7 Spices' over the rice and mix well until the rice is evenly coated and fragrant. Pour chicken broth or water into the rice, ensuring it's well combined. Add salt to taste and stir. Optionally, add yellow food coloring or saffron for a vibrant color. Cover the pot and bring the mixture to a boil over high heat. Once boiling, move the pot to a smaller burner, heat to low, and cook for until the rice is tender and the liquid is absorbed.

  4. Prepare the Stuffing Mixture

Once the biryani rice is cooked, scoop a portion of it into a separate bowl to cool down. Add meatballs, fried slivered almonds, and golden raisins to the cooled rice. Mix all the ingredients well to combine.

  5. Stuff and Secure the Turkey

Pat the inside of the turkey dry again. Carefully stuff the turkey cavity with the prepared biryani mixture. Use toothpicks to close the opening of the turkey, securing the stuffing inside. Tie the turkey legs together with kitchen twine to maintain its shape during roasting.

  6. Prepare for Roasting

Prepare a plastic roasting bag by dusting the inside with flour as instructed on the bag's packaging. Optionally, place the turkey neck and giblets at the bottom of the bag. Carefully place the stuffed turkey into the prepared roasting bag. Add small pieces of soft butter on top of the turkey breast for extra moisture and browning. Securely tie the roasting bag closed and make a few small slits on the top of the bag to allow to escape.

  7. Roast the Turkey

Roast the turkey in a preheated oven according to the instructions on the roasting bag's box (typically , depending on turkey size, at around 350°F (approximately 175°C) / 175°C (approximately 345°F)), until the turkey is golden brown and cooked through. The liquid collected at the bottom of the bag can be used to make gravy.

  8. Serve and Enjoy

Once roasted, carefully remove the turkey from the oven and for a few minutes. Remove the toothpicks and twine. Carve the turkey and serve it hot with the biryani stuffing. Enjoy your juicy and delicious Iraqi-style stuffed turkey!
