Follow each step to make the recipe successfully.
Turn on the flame to medium. Take a frying pan and add 1/4 cup of cooking oil. Let the oil heat. Add 1/2 kg of fully washed okra (lady finger/bhindi), cut with both corners removed, to the pre-heated oil. Fry well, continuously stirring on medium flame, until the stickiness of the okra is completely removed, which should take about . Once done, keep the pan aside.
Take a karahi and add the remaining 1/4 cup of cooking oil. Add 4 medium thin-chopped onions and fry them on high flame until they turn golden in color. This should take about . Add 1 tbsp of ginger garlic paste and mix well. Continue frying for on medium flame.
Add 1 tsp red chilli powder, 1/2 tsp turmeric powder, 1 tsp salt (or to taste), 1 tsp chaat masala, 1 tbsp coriander powder, and 1/2 tsp Kashmiri red chilli powder. Add 3-4 tbsp of water gradually and mix well. Cook the mixture for on medium flame. Add another 2-3 tbsp of water and stir for on medium flame, ensuring the water dries out.
Add 2 medium tomatoes (pureed) and mix well, continuously stirring. Add 1/4 glass of water and cover the karahi. Cook for on low flame. After , uncover and stir well. Make sure to cook until the water dries. Add 2 tbsp of yogurt and mix well, stirring continuously.
Cover the karahi again and cook for on medium flame, or until the oil rises to the surface of the masala. After , uncover it.
Add the previously fried okra to the cooked masala and mix well. Keep stirring for on medium flame. Add 1/2 glass of water and mix and stir well. Continue cooking for on medium flame. Turn off the flame.
Cover the karahi and let it cook for on low flame. After , uncover it. Add 2 big thick-chopped green chillies and 2 pinches of garam masala. Give it a good mix. Cook for on medium flame. Turn off the flame.
Dish out the perfectly cooked Bhindi Shorba into a big bowl. Garnish with fresh coriander as required. Your delicious Masala Bhindi Shorba is now ready to serve hot.
