In a large mixing bowl, add 2 cups of puffed rice, 1/2 cup of cornflakes, and 1/2 cup of sev.
To the bowl, add 1/4 cup of chopped raw mango, 1/4 cup of pomegranate seeds, 1/4 cup of chopped tomatoes, 1/4 cup of chopped red onion, and 1/2 cup of cubed boiled potatoes.
Sprinkle 1 teaspoon of red chili powder, 1 teaspoon of chaat masala, 1/2 teaspoon of black salt, and 1/2 teaspoon of cumin powder over the ingredients.
Pour 2 tablespoons of green chutney (mint & coriander) and 2 tablespoons of red chutney (tamarind & date or spicy red) into the bowl.
Add 1-2 chopped green chilies (to taste) and 2 tablespoons of fresh chopped coriander leaves.
Using two large spoons, mix all the ingredients thoroughly until well combined and coated with the chutneys and spices.
Transfer the Bhel Puri to a serving bowl. Garnish with 4-6 pieces of chaat papdi, 1 tablespoon of fresh coriander leaves, 1 tablespoon of pomegranate seeds, and 1 tablespoon of chopped raw mango pieces. Serve immediately to enjoy its crispiness.
