Ingredients

For Puffed Rice Base

  • 3 cupsPuffed Rice
  • 1/4 tspSalt
  • 1/4 tspChilli flakes
  • 1/4 tspCumin powder
  • 1/4 tspAmchur powder

For the Chaat Mix

  • 3 TbspNimko mixture
  • 2 TbspRoasted Peanuts
  • 1/2 small sizeOnion, chopped
  • 1/2 small sizeTomato, chopped
  • 1 mediumBoiled Potato, cubed
  • 2 TbspCucumber, chopped
  • as requiredPotato Chips OR Papri
  • 1Green chilli, chopped
  • 2 TbspGreen Coriander, chopped
  • as per tasteChaat Masala
  • 1 tspLemon juice
  • 3 TbspTamarind chutney
  • 3 TbspGreen chutney

Step-by-Step Instructions

  1. 1.Dry Roast Puffed Rice

    Heat a pan on low heat. Add 3 cups of puffed rice to the pan.

  2. 2.Season and Roast Spices

    Add 1/4 tsp salt, 1/4 tsp chili flakes, and 1/4 tsp cumin powder to the puffed rice. Continue roasting on low heat, stirring constantly, until the spices release their aroma and the puffed rice becomes crispy.

  3. 3.Add Amchur Powder and Cool

    Add 1/4 tsp amchur powder and roast for another 30 seconds, stirring continuously. Turn off the heat and let the puffed rice cool down completely to room temperature.

  4. 4.Combine Dry Ingredients

    Transfer the cooled puffed rice to a large mixing bowl. Add 3 Tbsp Nimko mixture, 2 Tbsp roasted peanuts, 1/2 small chopped onion, 1/2 small chopped tomato (with seeds removed), 1 medium boiled and cubed potato, 2 Tbsp chopped cucumber, and crushed potato chips or papri as required.

  5. 5.Add Green Chilli and Mix

    Add 1 chopped green chilli (adjust to your spice preference). Mix all the dry ingredients thoroughly until well combined.

  6. 6.Add Fresh Herbs and Seasonings

    Add 2 Tbsp chopped green coriander, chaat masala as per taste, and 1 tsp lemon juice to the mixture.

  7. 7.Add Chutneys

    Pour in 3 Tbsp tamarind chutney and 3 Tbsp green chutney over the ingredients. (Recipes for these chutneys are available on the channel).

  8. 8.Final Mix and Serve

    Mix everything well until all ingredients are evenly coated with the chutneys and spices. Serve immediately for the best crispy texture.
