Step-by-Step Instructions

Step 1: Prepare the Ladies' Fingers

Wash and pat dry 300 gms ladies' fingers. Make a lengthwise slit in each lady's finger, ensuring not to cut through completely, to create a pocket for stuffing.

Step 2: Prepare the Spice Mix

In a bowl, combine 1 tsp red chilli powder, 1½ tsps coriander powder, 1 tsp cumin powder, 1 tsp dried mango powder, ½ tsp turmeric powder, 1 tsp garam masala powder, and salt to taste. Mix all the spices well to form a uniform blend.

Step 3: Stuff the Ladies' Fingers

Carefully take each slit lady's finger and generously stuff it with the prepared spice mix. Ensure the spice mix is evenly distributed inside the okra.

Step 4: Heat Oil and Add Okra

Heat 2 tbsps of oil in a pan. Once the oil is hot, add the stuffed ladies' fingers and 6-8 shallots to the pan.

Step 5: Cook the Okra

Sauté the ladies' fingers and shallots for 10-12 minutes on medium heat. Stir occasionally to ensure even cooking. Do not add any water during this step, as it can make the okra sticky.

Step 6: Add Remaining Spice Mix

Sprinkle any remaining spice mix over the cooking okra and mix gently. Continue to cook for a few more minutes until the spices are fragrant and well combined with the tender okra.

Step 7: Serve

Transfer the Bharwan Bhindi to a serving dish. Serve hot with roti or as a delicious side dish.

Pro Tips

Do not add water at any stage of cooking to prevent the okra from becoming sticky.

Cook on medium heat to ensure the spices roast well and the okra becomes perfectly tender.
