Bharwan Bhindi – Stuffed Okra

Ingredients

  • 300 gmsLadies' fingers (Bhindi)
  • 1 tspRed chilli powder
  • 1½ tspsCoriander powder
  • 1 tspCumin powder
  • 1 tspDried mango powder (Amchur)
  • ½ tspTurmeric powder
  • 1 tspGaram masala powder
  • to tasteSalt
  • 2 tbspsOil
  • 6-8Shallots (Madras pyaaz)

Step-by-Step Instructions

  1. 1.Prepare the Ladies' Fingers

    Wash and pat dry 300 gms ladies' fingers. Make a lengthwise slit in each lady's finger, ensuring not to cut through completely, to create a pocket for stuffing.

  2. 2.Prepare the Spice Mix

    In a bowl, combine 1 tsp red chilli powder, 1½ tsps coriander powder, 1 tsp cumin powder, 1 tsp dried mango powder, ½ tsp turmeric powder, 1 tsp garam masala powder, and salt to taste. Mix all the spices well to form a uniform blend.

  3. 3.Stuff the Ladies' Fingers

    Carefully take each slit lady's finger and generously stuff it with the prepared spice mix. Ensure the spice mix is evenly distributed inside the okra.

  4. 4.Heat Oil and Add Okra

    Heat 2 tbsps of oil in a pan. Once the oil is hot, add the stuffed ladies' fingers and 6-8 shallots to the pan.

  5. 5.Cook the Okra

    Sauté the ladies' fingers and shallots for 10-12 minutes on medium heat. Stir occasionally to ensure even cooking. Do not add any water during this step, as it can make the okra sticky.

  6. 6.Add Remaining Spice Mix

    Sprinkle any remaining spice mix over the cooking okra and mix gently. Continue to cook for a few more minutes until the spices are fragrant and well combined with the tender okra.

  7. 7.Serve

    Transfer the Bharwan Bhindi to a serving dish. Serve hot with roti or as a delicious side dish.
