Sprinkle some flour on your countertop. Take half of the pizza dough from the bowl, shape it into a ball, and flatten it. Use a rolling pin to roll it out until it is as thin as you want it to be. Place the rolled dough on parchment paper in a baking tray. Repeat the process for the second half of the dough. Stretch both doughs to fit the baking trays.
Turn your oven to 200°C (approximately 390°F) (392°F (approximately 200°C)) with top and bottom heat. Place the baking trays with the pizza dough into the oven and pre-bake them for about . Keep an eye on the dough from time to time.
While the dough is pre-baking, quarter your red onions and then slice them. Cut the mozzarella cheese into roughly 16 pieces, so each pizza slice gets some mozzarella.
Pour BBQ sauce and sieved tomatoes into a measuring cup. Add dried parsley, salt, and ground black pepper. Mix thoroughly with a spoon until well combined.
Cut the chicken breast into strips, ensuring they are not too small to dry out or too big to cook properly. Place the chicken strips into a bowl. Season with salt and pepper, then add a little olive oil. Mix the chicken with the spices and oil.
Take the pre-baked pizza doughs out of the oven. Distribute the prepared BBQ sauce evenly between the two pizza doughs, spreading it to cover most of the surface. Place the seasoned chicken strips evenly on top of the sauce. Distribute the sliced red onions over the chicken. Sprinkle shredded Gouda cheese generously over both pizzas. Finally, place the cut mozzarella cheese pieces on top of the pizzas.
Place the assembled pizzas back into the oven, which should still be at 200°C (approximately 390°F) (392°F (approximately 200°C)). Bake for about . After , turn on the air convection function of your oven to make the pizza brown and crispy. Continue baking for about 10 more minutes, or until you are satisfied with the crispiness and brownness.
Carefully take the pizzas out of the oven. Cut into pieces and serve immediately. Optionally, garnish with fresh arugula for a touch of green and freshness.
