Whether fresh or frozen, cut your lobster tails right down the middle of the shell using kitchen shears.
Separate the meat from the shell. You can use a spoon or your fingers to do this. Carefully lift up the meat out of the opening, but do not completely disconnect it from the end of the tail.
In a bowl, combine melted butter, lemon juice, garlic powder, freeze-dried chives, and paprika. Mix well until all ingredients are incorporated.
Pour a portion of the melted compound butter into a separate small bowl to reserve for the lobsters at the end.
Using a spoon, generously the prepared lobster tails with the compound butter.
Place the lobster tails in a 400-degree Fahrenheit oven and bake for . The shell should turn red, the meat should be white, and the internal temperature should reach 140 degrees Fahrenheit (approximately 60°C) when done.
Once baked, garnish the lobster tails with the reserved compound butter and serve immediately.
