Add 1 cup of peas to a mixer grinder jar. Grind them coarsely without adding any water. Transfer the coarsely ground peas to a separate bowl and set aside.
In the same mixer grinder jar, add 2 roughly chopped raw potatoes, 3 green chilies, a 1/2 inch piece of ginger, 8-9 garlic cloves, and 1 roughly chopped onion. Grind these ingredients into a smooth paste without adding water. The potatoes will release enough moisture.
Transfer the potato-onion paste to a large non-stick pan. Add 1 cup of water. Place the pan on a stove over low heat and stir continuously. Cook until the mixture starts to thicken and bubble slightly.
Once the potato mixture has thickened, add the coarsely ground peas, 1 tablespoon of white sesame seeds, and salt to taste. Mix all ingredients thoroughly with a spatula for about , ensuring everything is well combined and slightly cooked.
Gradually add 1 cup of rava (semolina) to the pan, mixing continuously to prevent lumps. Follow with 1/2 cup of rice flour, mixing until the mixture forms a cohesive dough-like consistency that pulls away from the sides of the pan. Continue cooking on low heat until the dough is firm.
Transfer the prepared dough to a large plate or tray. Spread it out evenly to allow it to cool down slightly. It should be warm enough to handle comfortably, but not completely cold.
To the slightly cooled dough, add 1 tablespoon of pizza seasoning, 1 teaspoon of red chili powder, and a generous amount of chopped coriander leaves. Mix all these ingredients thoroughly by hand until they are evenly distributed throughout the dough.
Lightly grease your hands with oil. Take a small portion of the dough, roll it into a smooth ball, and then flatten it slightly. Press one side of the flattened dough into a plate of white sesame seeds to coat. Using your finger or a small round object, create a hole in the center to form a donut shape. Repeat this process for the remaining dough until all donuts are shaped.
Heat oil in a frying pan over medium-high heat. Once the oil is hot (test with a small piece of dough; it should sizzle and rise), carefully place the shaped donuts into the hot oil. Do not overcrowd the pan. Fry them, flipping occasionally with a spoon, until they turn golden brown and crispy on both sides. This should take about per batch.
Once fried to perfection, remove the donuts from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil. Serve the crispy Aloo Matar Donuts hot with your favorite chutney, ketchup, or as a standalone snack.
