In one bowl, 3-4 tablespoons of refined flour (maida) with water, adding gradually, until you achieve a thick, lump-free slurry. In a separate plate, spread out 1.5 to 2 cups of breadcrumbs.
Gently lift each shaped vada and dip it completely into the refined flour slurry, ensuring both sides are well coated. Then, transfer the vada to the plate of breadcrumbs and coat it thoroughly, using your other hand to keep the wet and dry ingredients separate.
Heat sufficient cooking oil in a deep kadai (wok) on high flame. Once the oil is hot, carefully place the coated vadas into the oil. Deep fry them, flipping gently, until they turn a beautiful light golden brown on both sides, indicating they are crispy and cooked through.
Once the vadas are golden brown, remove them from the oil using a slotted spoon to drain any excess oil. Serve the hot Aaloo Paneer Vadas immediately with your preferred chutney, such as Murunga leaves chutney.
