Pour enough vegetable oil into a pan to cover the bottom. Heat the oil over medium heat. Once hot, carefully place flour tortillas into the pan and fry until crispy and golden brown on both sides. Remove and set aside on a paper towel-lined plate to drain excess oil. Repeat for all tortillas.
Add 1 (15 oz) can of refried beans to a small saucepan. Stir in 1 teaspoon of taco seasoning, 1 teaspoon of Dan-O's seasoning, 1 teaspoon of onion powder, 1 teaspoon of garlic black pepper, 2 teaspoons of Accent, and 1 teaspoon of Slap Ya Mama seasoning.
Add about 1/4 cup of water to the beans and stir to achieve a smoother consistency. Taste the beans and adjust seasonings as needed. Add an additional 1 teaspoon of taco seasoning, 2 teaspoons of Accent, 2 teaspoons of onion powder, and 1 teaspoon of smoked paprika to the beans. Stir well and let for until heated through and flavors meld.
Spread a layer of the seasoned refried beans onto one fried flour tortilla. Place a second fried tortilla on top to create a two-layer base for each pizza. Repeat for all desired pizzas (the video shows 3 pizzas being made).
Spread enchilada sauce evenly over the top tortilla of each pizza. On one pizza, sprinkle plant-based shredded cheese. On another pizza, sprinkle taco blend shredded cheese. For the third pizza, the video shows only taco blend cheese.
On the pizza with plant-based cheese, add chopped green onions and cilantro. On the pizza with dairy taco blend cheese, add tomatoes, green onions, and cilantro. For the third pizza (dairy cheese), add tomatoes and green onions.
Preheat your oven to 375°F (approximately 190°C) (190°C (approximately 375°F)). Place the assembled pizzas on a baking sheet and bake on the middle rack for , or until the cheese is melted and bubbly. Keep an eye on them as oven temperatures vary.
Carefully remove the Mexican pizzas from the oven. Garnish with a dollop of sour cream if desired, and serve immediately.
