In a microwave-safe mug, mix together the all-purpose flour, unsweetened cocoa powder, granulated sugar, baking powder, and a pinch of salt.
To the dry ingredients in the mug, add the milk, vegetable oil (or melted butter), and vanilla extract.
If making a red velvet cake, add a few drops of red food coloring to the mixture. This step can be skipped for a chocolate mug cake.
Stir all the ingredients in the mug until the batter is smooth and well combined.
Spoon 1 tablespoon of raspberry or strawberry jam into the center of the batter.
Drop a few white chocolate chips (or a small piece of chocolate) directly on top of the jam. They will sink during cooking.
Place the mug in the microwave and cook for 60 to 90 seconds. The cake should rise and appear set on top.
Let the mug cake cool for one minute. Then, top with whipped cream and Valentine's Day sprinkles before serving.
• Store covered in the fridge for up to 1 day.
• Freeze for longer storage.
• Reheat gently in the microwave before serving.
• Skip red food coloring for a chocolate mug cake.
• Use raspberry or strawberry jam for the gooey center.
• Use a small piece of chocolate instead of white chocolate chips.
