No Onion?
No Garlic (fresh)?
No Garam masala?
Add 3-4 tablespoons of oil to a pan and heat it. Once hot, add 2 roughly chopped onions and stir. Continue stirring until the onions turn golden brown, which takes about .
Once the onions are golden brown, add 1.5 tablespoons of garlic/ginger paste. Stir it in very quickly. Then, add 1 whole chicken cut into pieces. Stir the chicken with the onion and ginger/garlic mixture for about , allowing the flavors to absorb into the chicken.
After , the chicken should be browned and coated. Add a little water to keep it moist. Then, add 1 tablespoon of tomato puree (Cirio brand recommended). Stir it in. Next, add 1 teaspoon of chilli powder, 1.5 tablespoons of cumin/coriander powder (50/50 mix), 0.5 teaspoon of garam masala, 0.5 teaspoon of turmeric, and 1.5 teaspoons of salt. Stir all the spices thoroughly with the chicken until everything is well combined and the chicken is fully coated.
Add 1 chopped fresh tomato and 2 roughly chopped green chillies to the pan. Stir them in with the chicken and spices. Allow the tomatoes to soften slightly.
Add a little more water to the curry. Lower the heat and let it for about . This allows the chicken to cook fully and the flavors to meld together.
After , check if the chicken is fully cooked by using a fork to see if it breaks apart easily and is white inside. At this stage, you can decide if you want more sauce (stop cooking) or a drier curry (continue until desired consistency). Once cooked to your liking, serve the chicken curry.
• Less is more: You don't need a lot of spices to create amazing tasting curries.
• Cooking technique is crucial: Ensure onions are cooked until golden brown and spices are properly infused.
• Quality ingredients: Use good quality spices, meat, and fresh produce for the best flavor.
• Stir each ingredient thoroughly before adding the next to blend flavors effectively.
• Adjust water and simmering time based on desired sauce consistency (more sauce or drier curry).
