Add 2 cups of whole wheat flour to a wooden bowl.
Add ½ tsp of salt to the flour.
Pour ¾ cup of hot water into the flour mixture and combine using a spoon until it has cooled down enough to handle.
Once the mixture has cooled down, knead it using your hands. Sprinkle more water if required, a few drops at a time, until a smooth dough forms. This will take approximately of continuous kneading.
Add ½ tsp of oil to the smooth dough and spread it evenly over the surface. Cover the dough with a wet cloth and let it rest for .
After resting, take a small portion of the dough, around the size of a large lemon, and roll it into a smooth ball between your palms.
Dust the dough ball with whole wheat flour. Place it on a rolling board and roll it out thinly into a circular shape using a rolling pin, ensuring even thickness.
Place the rolled dough on a preheated tawa (griddle) over medium-high heat. Cook for approximately until small bubbles start to appear on the surface.
Carefully transfer the phulka to a direct high flame on the gas stove using tongs. Cook for a few seconds until it starts to puff up completely. Flip and cook for a few more seconds until brown spots appear on both sides.
Optionally, you can also cook the phulka completely on the tawa by pressing gently with a wooden spatula until brown spots start to appear on both sides and it puffs up.
Serve the hot and fresh phulkas immediately with your favorite curry or side dish.
