  • 2 CupsWhole Wheat Flour
  • ½ tspSalt
  • ¾ CupHot Water
  • ½ tspOil

Step-by-Step Instructions

  1. 1.Prepare the Dough Base

    Add 2 cups of whole wheat flour to a wooden bowl.

  2. 2.Add Salt

    Add ½ tsp of salt to the flour.

  3. 3.Combine with Hot Water

    Pour ¾ cup of hot water into the flour mixture and combine using a spoon until it has cooled down enough to handle.

  4. 4.Knead the Dough

    Once the mixture has cooled down, knead it using your hands. Sprinkle more water if required, a few drops at a time, until a smooth dough forms. This will take approximately 3-5 minutes of continuous kneading.

  5. 5.Apply Oil and Rest

    Add ½ tsp of oil to the smooth dough and spread it evenly over the surface. Cover the dough with a wet cloth and let it rest for 10 minutes.

  6. 6.Form Dough Balls

    After resting, take a small portion of the dough, around the size of a large lemon, and roll it into a smooth ball between your palms.

  7. 7.Dust and Roll

    Dust the dough ball with whole wheat flour. Place it on a rolling board and roll it out thinly into a circular shape using a rolling pin, ensuring even thickness.

  8. 8.Cook on Tawa

    Place the rolled dough on a preheated tawa (griddle) over medium-high heat. Cook for approximately 30-45 seconds until small bubbles start to appear on the surface.

  9. 9.Puff on Direct Flame

    Carefully transfer the phulka to a direct high flame on the gas stove using tongs. Cook for a few seconds until it starts to puff up completely. Flip and cook for a few more seconds until brown spots appear on both sides.

  10. 10.Alternative Cooking Method (Optional)

    Optionally, you can also cook the phulka completely on the tawa by pressing gently with a wooden spatula until brown spots start to appear on both sides and it puffs up.

    Serve the hot and fresh phulkas immediately with your favorite curry or side dish.
