Follow each step to make the recipe successfully.
Wash 500g mutton pieces thoroughly under running water.
In a large bowl, add the washed mutton. Add 1 tsp turmeric powder, 1.5 tsp red chili powder, 1 tsp salt, and 1 tbsp ginger-garlic paste. Mix everything well until the mutton pieces are evenly coated. Let it for at least .
Heat 3-4 tbsp cooking oil in a pressure cooker over medium heat. Once hot, add 2 bay leaves, 1 inch cinnamon stick, 3-4 green cardamoms, 1 black cardamom, 4-5 cloves, and 8-10 black peppercorns. for about until the whole spices become fragrant.
Add 2 large chopped onions (approximately 250g) to the pressure cooker. the onions on medium heat, stirring occasionally, for until they turn golden brown.
Add the mutton to the pressure cooker. Mix it thoroughly with the onions and whole spices.
Cook the mutton on medium-high heat for , stirring occasionally, until the mutton releases its own water and starts to change color and brown slightly.
Add 1/2 cup tomato puree/paste, 2 tbsp coriander powder, 1 tsp cumin powder, and 1 tsp garam masala to the cooker.
Mix all the spices and tomato with the mutton. Continue to cook on medium heat for , stirring frequently, until the oil separates from the masala mixture, indicating that the spices are well cooked.
Pour in 1-1.5 cups of water and mix well to combine everything and form the curry base.
Close the lid of the pressure cooker. Cook on medium-high heat for 4-5 whistles. Then, the heat to low and cook for another , or until the mutton is tender. Allow the pressure to release naturally before opening the lid.
Once the pressure is released, open the cooker and check the tenderness of the mutton. Garnish with 2 tbsp of fresh chopped coriander. Serve the hot mutton curry with rice or bread.
