  • 1 cup (pureed or crushed)Canned Tomatoes
  • 1 tspGround Turmeric
  • 1 tsp (or to taste)Chili Powder
  • 1 tsp (or to taste)Salt
  • 1/2 tspSugar
  • 2-3 (chopped, for garnish)Green Chilies
  • 1/4 cup (chopped, for garnish)Fresh Coriander

Step-by-Step Instructions

  1. 1.Prepare Cabbage and Potatoes

    Shred the cabbage using a mandoline or a knife. Peel the potatoes and chop them into 1cm cubes. If preparing in advance, soak the chopped potatoes in cold water to prevent browning.

  2. 2.Temper Spices

    Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds. Allow them to crackle and release their aroma.

  3. 3.Add Aromatics and Tomatoes

    Add 1/4 teaspoon of asafoetida (hing) and 1 tablespoon of minced ginger to the pan. Stir briefly. Then, add 1 cup of canned tomatoes (or fresh pureed tomatoes), 1 teaspoon of ground turmeric, 1 teaspoon of chili powder, 1 teaspoon of salt, and 1/2 teaspoon of sugar. Stir everything together.

    Bring the tomato mixture to a gentle simmer and cook uncovered for approximately 5-7 minutes, or until the oil begins to separate from the tomatoes, indicating the masala is cooked.

  5. 5.Add Vegetables and Cook with Ice Lid

    Add the chopped potatoes and shredded cabbage to the pan. Stir thoroughly to ensure all the vegetables are coated in the tomato masala. Cover the pan with a lid filled with ice. Cook over low heat for 5 minutes.

    After 5 minutes, remove the ice lid, stir the curry, and replace the ice lid. Continue cooking for another 5 minutes. Repeat this process until the potatoes are tender and the cabbage is cooked through (total cooking time with ice lid approximately 15-20 minutes). The melting ice creates steam that cooks the vegetables in their own juices.

    Remove the ice lid. Increase the heat to high and stir-fry the curry constantly for approximately 3-5 minutes. This step allows any excess moisture to evaporate and encourages some browning on the vegetables, adding depth of flavor.
