House Special Tofu with Beef and Vegetables

  • 1 block (14-16 oz), cubedFirm Tofu
  • 1/2 cup for frying, 2 tbsp for stir-fryingCooking Oil

  • 3 stalks, chopped (white and green parts separated)Green Onions
  • 8 oz, thinly slicedBeef
  • 1 cupBroccoli Florets
  • 1/2, slicedRed Bell Pepper
  • 1 cup, choppedBok Choy

Brown Sauce

  • 3 tbspSoy Sauce
  • 2 tbspOyster Sauce
  • 1 tspSugar
  • 1 tspSesame Oil
  • 1/4 cupWater or Chicken Broth
  • 1 tbspCorn Starch
  • 2 tbspWater (for slurry)

Step-by-Step Instructions

  1. 1.Fry the Tofu

    Heat 1/2 cup of cooking oil in a wok over high heat. Add the cubed tofu and fry until golden brown and crispy on all sides, about 3-5 minutes. Remove the fried tofu from the wok using a slotted spoon and drain excess oil.

  2. 2.Prepare the Wok for Stir-frying

    Discard most of the frying oil, leaving about 2 tablespoons in the wok. Heat the fresh oil until shimmering.

  3. 3.Sauté Aromatics

    Add minced garlic and the white parts of the green onions to the hot wok. Stir-fry for about 30 seconds until fragrant, allowing flames to flare up for 'wok hei'.

  4. 4.Stir-fry Vegetables

    Add broccoli florets, sliced red bell pepper, and bok choy to the wok. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.

  5. 5.Combine Tofu and Vegetables

    Return the fried tofu to the wok with the stir-fried vegetables. Add the thinly sliced beef (if using) and quickly toss to combine.

  6. 6.Add Brown Sauce

    Pour the prepared brown sauce (soy sauce, oyster sauce, sugar, sesame oil, water/broth) over the tofu, beef, and vegetables. Stir well to coat all ingredients evenly and let the tofu soak in the sauce for about 1 minute.

  7. 7.Thicken the Sauce

    In a small bowl, mix 1 tablespoon of corn starch with 2 tablespoons of water to create a slurry. Pour the corn starch slurry into the wok while continuously stirring. Cook for another 1-2 minutes until the sauce thickens to your desired consistency.

  8. 8.Final Touches and Plating
