For the Roti Dough

  • 2 cupsWhole wheat flour
  • 1 cupWater
  • 1 tablespoonOlive oil
  • 1/2 teaspoonSalt

Step-by-Step Instructions

  1. 1.Prepare the Dough

    In a large mixing bowl, combine 2 cups of whole wheat flour and 1/2 teaspoon of salt.

  2. 2.Mix the Dough

    Gradually add 1 cup of water to the flour mixture, mixing with your hands until a shaggy dough forms. Continue to knead for 2-3 minutes until the dough starts to come together.

    Add 1 tablespoon of olive oil to the dough. Knead the dough vigorously for another 5-7 minutes until it becomes smooth, soft, and elastic. The dough should not stick to your hands or the bowl.

    Cover the dough with a damp cloth or plastic wrap and let it rest at room temperature for at least 15-20 minutes. This helps the gluten relax, making the rotis softer and easier to roll.

    After resting, gently knead the dough for a minute. Divide the dough into 6-8 equal portions using a dough cutter or knife.

    Take one portion of dough and roll it into a smooth ball. Lightly dust the dough ball with flour and, using a rolling pin, roll it out into a thin, round disc, about 6-7 inches in diameter. Ensure it's evenly thin.

    Place a tawa (flat griddle or heavy-bottomed pan) over medium-high heat. Let it heat up until it's hot but not smoking.

    Carefully place a rolled roti onto the hot tawa. Cook for about 30-45 seconds until you see small bubbles appearing on the surface and the color changes slightly.

    Flip the roti using tongs or your fingers. Cook the second side for another 30-45 seconds until light brown spots appear.

    Flip the roti one more time. Using a clean kitchen towel, gently press the edges of the roti. It should start to puff up like a balloon. Continue pressing gently for 15-20 seconds until it's fully puffed and has golden brown spots.
