Heat a pan and add cooking oil. Add the thinly sliced garlic (5 cloves) to the cool oil. Fry over low heat, moving the garlic frequently with chopsticks to prevent burning, until they turn a light golden brown. Remove the garlic chips from the oil and set aside on a paper towel to drain excess oil. These will be used as a garnish later.
Turn the heat back on. Add the garlic (1 whole bulb) to the remaining oil in the pan. Fry over low heat, stirring frequently, until the garlic turns a light golden brown. Be careful not to burn it. Strain the fried garlic from the oil, reserving the garlic-infused oil for later use.
In the same pan, add 1 tablespoon of the reserved garlic oil and 20g of butter. Heat over medium heat until the butter melts and you can smell its fragrance. Add 6 eggs to the pan and cook them until they are about 80% done, leaving some liquid. This ensures the eggs will beautifully coat the rice.
Add 4 cups of cooked jasmine rice to the pan with the eggs. Mix well, ensuring the rice is thoroughly coated with the eggs. Use a spatula to break up any clumps of rice and spread them out evenly. Continue to toss the rice frequently to dry out any moisture and prevent burning, aiming for individual grains.
Add 1.5 teaspoons of chicken stock powder and 0.5 teaspoon of salt to the rice. Mix well to distribute the seasonings evenly. Continue frying and tossing until the rice starts to 'jump' in the pan, indicating it's sufficiently dry and fluffy.
Add 1 tablespoon of light soya sauce, 4 stalks of chopped spring onion, and 1 tablespoon of black pepper powder to the fried rice. Mix everything together until the spring onions are fragrant and evenly distributed. Serve the garlic fried rice immediately, garnished with the crispy garlic chips prepared earlier.
