Step-by-Step Instructions

Step 1: Fry the Nuts

In a pot, add 2 tablespoons of ghee. Once melted, add sliced almonds, cashews, and raisins. Fry them until golden brown, then remove and set aside.

Step 2: Sauté Carrots in Ghee

Add 1 more tablespoon of ghee to the same pot. Then, add 500 grams of grated carrots. the carrots on high flame for , stirring continuously.

Step 3: Cook Carrots until Soft

Cover the pot and cook the carrots on low flame for until their moisture dries up and they become tender.

Step 4: Cook Carrots with Milk

Pour 250 ml of milk into the pot with the carrots. Cover again and cook on low flame for another until the milk is absorbed and dries up.

Step 5: Add Khoya

Once the milk has dried, add 100 grams of khoya (mawa) to the carrots. Mix well and let it cook for a few minutes with the lid on.

Step 6: Add Sugar and Nuts

Uncover the pot and add 200 grams of sugar, the previously fried almonds, cashews, and raisins. Also, add 1 teaspoon of cardamom powder (mixed with sugar powder, if desired).

Step 7: Finish Cooking

Mix all ingredients thoroughly. Cook with the lid open until the sugar water evaporates completely. Then, cover the pot and cook for another on low flame to allow the flavors to meld.

Step 8: Serve

Once the Gajar ka Halwa is ready, serve it warm, garnished with additional nuts if desired.
