Step-by-Step Instructions

Step 1: Prepare the Carrots

Wash, peel, and grate all the red carrots using a grater. Collect the grated carrots in a bowl.

Step 2: Boil Milk

Pour 1 liter of milk into a large, heavy-bottomed pan or kadhai and place it on medium heat. Bring the milk to a gentle boil.

Step 3: Add Carrots to Milk

Once the milk starts boiling, add the grated carrots to the pan. Stir well to combine the carrots with the milk.

Step 4: Cook Carrots in Milk

Continue to cook the carrots in the milk on medium heat, stirring occasionally, until all the milk has completely evaporated and the carrots are soft and tender. This process will take approximately . The mixture will thicken and turn a deeper orange color.

Step 5: Add Sugar

Once the milk has evaporated, add 1 cup of sugar to the carrot mixture. Mix thoroughly. The sugar will melt and release moisture, making the halwa slightly liquid again. Continue cooking and stirring until the sugar syrup is absorbed and the halwa thickens again.

Step 6: Add Dry Fruits

Add the chopped mixed dry fruits (cashews and raisins) to the halwa. Stir them in well to distribute evenly. Cook for another , stirring continuously, until the halwa reaches your desired consistency.

Step 7: Serve Gajar ka Halwa

Remove the Gajar ka Halwa from heat and transfer it to serving bowls. Serve hot as a delicious dessert.
