  • 3 tbspOil
  • 2 tbspGhee (clarified butter)
  • 5 nos.Cloves
  • 3 nos.Cinnamon sticks
  • 6-8 nos.Peppercorns
  • 3 nos.Dry red chilli (cut)
  • 2 large (200 gms)Sliced onion
  • 500 gmsChicken leg and thigh pieces
  • 1.5 tspGinger garlic paste
  • 1/2 tspTurmeric
  • 1 tspChilli powder
  • 1 tsp (to taste)Salt
  • 200 mlWater
  • 1/2 tspCumin powder (jeera)

Step-by-Step Instructions

  1. 1.Prepare the Base

    Heat 3 tablespoons of oil in a pan, then add 2 tablespoons of ghee. Add 5 cloves, 3 cinnamon sticks, 6-8 peppercorns, and 3 cut dry red chillies. Add 2 large (200 gms) sliced onions and fry for 8-10 minutes on medium heat until they turn light brown.

  2. 2.Add Chicken and Fry

    Remove half of the fried onions to a plate. Add 500 gms of chicken leg and thigh pieces to the pan. Fry the chicken for 1 minute on high heat. Flip all the chicken pieces and fry for another 1 minute on high heat until lightly browned.

  3. 3.Incorporate Ginger Garlic Paste and Spices

    Add 1.5 teaspoons of ginger garlic paste to the chicken. Fry for 5-6 minutes on medium heat until the chicken meat is browned. Add 1/2 teaspoon of turmeric, 1 teaspoon of chilli powder, and 1 teaspoon of salt (or to taste). Fry for 4-5 minutes on medium heat, mixing well to coat the chicken with the spices.

  4. 4.Cook the Chicken

    Pour 200 ml of water into the pan and give it a good mix. Cover the pan and cook for 10 minutes on low heat. After 10 minutes, add 1/2 teaspoon of cumin powder (jeera) and mix thoroughly.

  5. 5.Finish and Serve

    Cover the pan again and cook for 5 minutes on low heat. Add the fried onions that were set aside earlier back into the pan. Give it a final mix and simmer for 2-3 minutes on low heat before serving.
