Wash 1 cup of yellow moong dal thoroughly under running water using a colander until the water runs clear.
Add the washed dal, 100 grams of roughly chopped tomatoes, 1 teaspoon of salt, 1/2 teaspoon of turmeric powder, and 500 ml of water to a pressure cooker.
Close the pressure cooker and cook on a medium flame for about , or until 2 whistles are blown. Once done, turn off the stove and let the pressure cooker cool down naturally before opening.
Open the pressure cooker. The dal should be cooked and soft. If you prefer a smoother consistency, you can pass it through a sieve or use a traditional Indian dal ghotni (twirling tool) to mash it.
Heat 1 tablespoon of ghee in a small kadhai (or saucepan/frying pan) on a medium flame.
Add 1 teaspoon of whole cumin seeds, 1/2 teaspoon of whole mustard seeds, 1 teaspoon of freshly chopped ginger, 1 teaspoon of freshly chopped garlic, 1 deseeded green chili, 8-10 curry leaves, and 1 pinch of hing to the hot ghee. Cook until the mustard seeds start to pop, the curry leaves crisp up, and the garlic starts to brown (do not let it burn). This should take about .
Remove the kadhai from the heat and immediately pour the hot tadka mixture into the cooked dal in the pressure cooker. Stir well to combine, ensuring all the flavorful ghee and spices are incorporated.
Garnish the dal with 2 tablespoons of freshly chopped coriander. Give it one final good mix. Your Easy Yellow Dal Tadka is ready to be served hot with rice or bread.
