  • 1/2 cupShredded cooked chicken
  • 1/2 cupGrated zucchini
  • 1/3 cupGrated carrots
  • 1Chopped red bell pepper
  • 1/4 cupChopped green onions
  • 1Egg
  • 1/4 cupAll-purpose flour
  • 1 teaspoonSalt
  • 1/4 teaspoonPepper
  • 2-3 tablespoonsOlive oil

Step-by-Step Instructions

  1. 1.Prepare Chicken

    Shred 1/2 cup of cooked chicken. Rotisserie chicken can be used for this step.

  2. 2.Combine Ingredients

    In a large bowl, combine the shredded chicken, 1/2 cup grated zucchini, 1/3 cup grated carrots, 1 chopped red bell pepper, 1/4 cup chopped green onions, 1 egg, 1/4 cup all-purpose flour, 1 teaspoon salt, and 1/4 teaspoon pepper. Mix all ingredients together until well combined.

  3. 3.Heat Skillet

    In a large skillet, add 2 to 3 tablespoons of olive oil and heat over medium-high heat.

  4. 4.Form and Cook Patties

    Using a spoon or ice cream scoop, scoop portions of the mixture onto the hot pan. This recipe makes 8 patties, so cook in batches of 4. Use the back of a spoon to flatten each scoop into a patty form.

  5. 5.Flip and Finish Cooking

    Cook the patties until they are golden brown on one side. Then, flip them over and cook for a few more minutes until the other side is also golden brown and the patties are cooked through.

    Remove the cooked chicken veggie patties from the skillet and serve immediately.
