Follow each step to make the recipe successfully.
Heat 1 tablespoon of oil in a pan over medium-low heat. Add 1/4 cup of chana dal and roast, stirring continuously, until it starts to change color.
Once the chana dal starts to change color, add 2-3 dried red chillies and a few fresh curry leaves to the pan. Continue to roast until the dal is golden brown and aromatic.
Turn off the flame and let the roasted chana dal mixture cool down completely.
Transfer the cooled roasted chana dal, dried red chillies, and curry leaves to a mixer grinder jar.
To the mixer jar, add 1/2 cup of grated coconut, 2 green chillies, a small piece of tamarind, salt as per taste, and 1/2 cup of water.
Blend all the ingredients in the mixer grinder until a smooth, fine paste is formed. Add a little more water if needed to achieve the desired consistency.
Pour the prepared chana dal chutney into a serving bowl.
In a small pan (karahi), heat 1 tablespoon of oil. Add 1/2 teaspoon of mustard seeds and let them splutter.
Add a few curry leaves, 1 teaspoon of urad dal, and 2 dried red chillies to the hot oil. until the urad dal turns golden brown and the chillies are crisp.
Carefully pour the hot mixture over the prepared chana dal chutney in the serving bowl.
Mix the gently into the chutney. Serve the delicious Chana Dal Chutney immediately with hot idlis, dosas, or vadas.
