Yogurt Crunch Pudding

Today I post one of very interesting and easy fusion recipe “Yogurt Crunch Pudding”, which made with yogurt, fresh fruits and cornflakes. Cornflakes and fruits both gives crunchy bite and yogurt gives creamy texture. Even I was added vanilla, cardamom, and honey for flavoring and for base, use biscuit crumbs. You can choose any three four combo of fruits which available in season. I prefer citric and juicy fruits for any dessert which are good for health plus increase the taste of dessert to.


Servings: 2 Preparation time:
  • For Pudding:
  • Yogurt, Plain, Low Fat, Curd, yoghurt 2 1/2 Cup Yogurt (Curd, hung)
  • Amchur Powder, Mango Pd, Mango Powder, Amchoor Powder,dry Mango Powder, Man 1/2 Cup Mango, chopped
  • Kiwifruit, Green, Raw, Kiwi Fruit 1/2 Cup Kiwi, chopped
  • Apples, 1/4 Cup Apple, chopped
  • Pomegranates, Raw, Pomegranate 1/4 Cup Pomegranate (kernels)
  • Corn Flakes, Cornflakes, 1/4 Cup Cornflakes, crushed
  • Honey, 2 Tbsp. Honey
  • Vanilla Extract, Vanilla Essence 1/2 Tsp. Vanilla Essence
  • Cardamom Powder, Cardamom Pd, Choti Elaichi, Cardamom, Cardamon, Elachi 1/4 Tsp. Cardamom Powder
  • For Base:
  • biscuit, 1 Cup Biscuits (crumbs)
  • Brown Sugar, 2 Tsp. Sugar (Powered)
  • Butter, 2 Tbsp. Butter, (melted)
  • For Garnishing:
  • Pistachio Raw, Pista, Nuts Pistachios, (halves)
  • Pomegranates, Raw, Pomegranate Pomegranate ( Kernels)

Instructions (Preparation Steps):

  • Combine biscuits crumbs, melted butter and sugar in bowl and rub with fingertips.
  • Place the thick layer in serving bowl or dish and keep in freeze for 10-15 minutes to set.
  • Combine pudding ingredients in large bowl and pour over the base.
  • Garnish with chopped pistachios and pomegranate kernels.
  • Place in freeze to set and serve chilled.

Cook's Tip:
1 cup heavy cream can be replaced by 1 cup evaporated milk OR ¾ cup milk with 1/3 cup of butter.
To keep the yogurt fresh for many days, fill the vessel containing yogurt with water to the brim and refrigerate. Change the water daily.
Always warm dry spices like cumin seeds, cardamom, cloves, etc. on a griddle before powdering. They will grind faster and the powder will be finer.
